Yeast

Yeast, or rather top-fermenting yeast, is what puts the ‘real’ into ‘real ale’.  Also known as cask, or cask-conditioned, ales, real ales are live products and by contrast with lagers, some yeast is retained in cask beer giving the finished pint depths of flavour and aroma missing from the filtered and sterilised continental-style beers.  Like many breweries, Andwell’s carefully select and nurture their yeast in order to give their beers a distinctive character.
